BUDGET DINNER- SMOTHERED PORK CHOPS

Serves: 4 servings
- 4 pork loin chops (1/2 inch thick)
- 1 large carrot peeled and cubed
- ½ large onion diced
- 2 stalks celery sticks finely diced
- 1½ cups chicken stock unsalted
- ½ cup water
- 3 tbsp flour (extra for dipping pork chops)
- 1 tbsp olive oil
- 1 tsp thyme
- salt & pepper to taste
- Lightly season pork chops with salt and pepper. Then lightly flour both sides of the pork chop.
- Heat olive oil in a heavy sauce pan with a top.
- Once oil is hot brown pork chops on each side for 3 mins.
- Remove pork chops from pan and set aside.
- Add vegetables and herbs to the hot pan and saute until soft.
- Add in flour and stir into vegetables and let them brown a minute.
- Season with salt and pepper to taste.
- Stir in chicken stock and water and reduce heat. Taste for flavor and add more salt and pepper if needed.
- Once it thickens return the pork chops to the pan & cover with gravy.
- Place the top on the pan and let pork chops simmer for 25-30 min stirring occasionally.
- Remove from pan and serve hot over rice, pasta or potato.
Do not use center cut pork chops, they will dry up if cooked this method.
