Kale and Rice

Deliciously seasoned rice with subtle but well married flavors.

Serves: 2-4 servings
Ingredients
  • ½ Stick of butter
  • 1 tsp thyme
  • 1 cup diced onions
  • 1 cup of a pancetta
  • 1 tsp crushed ginger
  • 1 garlic clove finely diced
  • 1 cup of rice
  • 2 cups chicken stock
  • 2 cups coarsely chopped kale
  • salt & pepper to taste
Instructions
  1. In a medium sized pot with a lid saute' the onions and pancetta in the butter
  2. Once soft stir in the ginger thyme and garlic
  3. Add in the chicken stock and bring to a boil
  4. Reduce heat and add in rice and kale
  5. Add salt and pepper to taste and cover for about 12 minutes stirring occasionally.
  6. Leave the lid on the pot and remove the pot from the heat.
  7. Allow the steam to finish cooking the rice for another ten minutes.
  8. Serve hot
