Kale and Rice

Serves: 2-4 servings
- ½ Stick of butter
- 1 tsp thyme
- 1 cup diced onions
- 1 cup of a pancetta
- 1 tsp crushed ginger
- 1 garlic clove finely diced
- 1 cup of rice
- 2 cups chicken stock
- 2 cups coarsely chopped kale
- salt & pepper to taste
- In a medium sized pot with a lid saute' the onions and pancetta in the butter
- Once soft stir in the ginger thyme and garlic
- Add in the chicken stock and bring to a boil
- Reduce heat and add in rice and kale
- Add salt and pepper to taste and cover for about 12 minutes stirring occasionally.
- Leave the lid on the pot and remove the pot from the heat.
- Allow the steam to finish cooking the rice for another ten minutes.
- Serve hot
