Green beans beautifully flavored and roasted with mushrooms.

Ingredients
  • 2 cups of green beans
  • 1 cup of mushrooms cut in quarters
  • ΒΌ cup Olive Oil
  • 1 tsp minced garlic
  • 2 tbsp of balsamic vinegar
  • twist of lemon
  • salt and pepper to taste
Instructions
  1. In a medium sized bowl whisk together the olive oil, garlic, balsamic vinegar, twist of lemon
  2. Add the green beans and mushrooms to the bowl and toss, making sure to coat all the vegetables
  3. Cover and set in the fridge for an hour
  4. Remove from the fridge let sit while oven heats to 400 degrees
  5. Pour into a shallow cooking pan
  6. Sprinkle with salt and pepper
  7. Roast for 15 min
