Spiced Pumpkin Cake with Eggnog Cream Frosting

Serves: 8-10 servings
- 6 cups of flour
- 3 cups of sugar
- 8 eggs
- 3 cups oil
- 2 cups puree pumpkin
- 2 tsp baking soda
- 4 tsp baking powder
- 2 tsp nutmeg
- 4 tsp vanilla
- FOR ICING
- 24 oz of cream cheese
- 1 stick of butter
- 5 cups of powdered sugar
- 1 tbsp of Eggnog flavoring
- ½ tsp vanilla
- 1 tsp tsp pumpkin spice
- ½ cup of flour
- ⅛ tsp salt
- Preheat oven to 350 degrees
- Beat eggs
- Then add sugar and oil.
- Combine all dry ingredients in a bowl.
- Add dry ingredients with pumpkin together and mix.
- Pour batter equally between three 9 inch layer pans
- bake for 30 minutes until done.
- Let cool completely before putting icing on
- FOR ICING
- Cream together cream cheese, butter, and sugar
- Add in the flavoring and mix well
- Heat flour for 30 seconds
- Refrigerate for an hour
