Cranberry Pound Cake

This delicious pound cake is perfect for the holidays, its packed with lots of flavor and the sweet of the cranberries adds the perfect touch.
Serves: 8 mini loaves
Ingredients
  • 1 lb of Butter
  • 1 lb of Sugar
  • 1 lb of flour
  • 1 dozen eggs separated
  • ½ tsp vanilla
  • 1 tsp lemon
  • 1 tsp almond
  • 1 tsp pineapple flavoring
Instructions
  1. Preheat oven to 350 degrees
  2. Cream butter & sugar
  3. Add beaten egg yolks
  4. Beat well
  5. Add flour
  6. Add beaten egg whites
  7. Mix well
  8. Add in one cup of craisins and mix well
  9. Pour into small loaf pans or one regular size loaf pan
  10. Bake for about 20 minutes (mini loafs) or until a knife comes out clean when testing for doneness
Notes
If using a regular sized loaf pan cooking time will be longer, about 45 min to cook thru completely.
