Stuffed Pork Chops

Serves: 4 servings
- 2 cups cubed sweet potato (skin on)
- 2 gala apples cubed (skin on)
- 1 small red onion sliced
- ½ of a red pepper sliced
- 5 strips of bacon cut in half-inch pieces
- 1 spring of rosemary
- 4 thick cut bone-in pork chops
- salt and pepper to taste
- sprinkle of red pepper flakes (optional)
- Stuffing
- 1 cup baby spinach leaves
- ½ cup of sliced mushrooms
- ½ cup of diced onions
- ½ tsp of minced garlic
- ½ cup goats cheese
- Preheat oven to 350 degrees
- First prepare the stuffing for the pork chop
- Lightly saute the onion, minced garlic , and mushrooms
- Combine the spinach leaves, goat cheese and sauteed vegetables
- Slice a pocket into the fat side of the pork chops and stuff with the mixture. Use toothpicks to keep them together
- In a dutch oven or pan that can go into the oven, saute the bacon and red onion until the bacon has browned a bit
- add in the sweet potato, rosemary, red pepper and apples stirring occasionally until browned
- add salt and pepper to taste, sprinkle red pepper flakes.
- place the pork chops on top of the potato and place in the oven for 45 minutes covered.
