Stuffed Pork Chops

This recipe has a variety of complimentary flavors and is a perfect one pot recipe for a dutch oven.

Ingredients
  • 2 cups cubed sweet potato (skin on)
  • 2 gala apples cubed (skin on)
  • 1 small red onion sliced
  • ½ of a red pepper sliced
  • 5 strips of bacon cut in half-inch pieces
  • 1 spring of rosemary
  • 4 thick cut bone-in pork chops
  • salt and pepper to taste
  • sprinkle of red pepper flakes (optional)
  • Stuffing
  • 1 cup baby spinach leaves
  • ½ cup of sliced mushrooms
  • ½ cup of diced onions
  • ½ tsp of minced garlic
  • ½ cup goats cheese
Instructions
  1. Preheat oven to 350 degrees
  2. First prepare the stuffing for the pork chop
  3. Lightly saute the onion, minced garlic , and mushrooms
  4. Combine the spinach leaves, goat cheese and sauteed vegetables
  5. Slice a pocket into the fat side of the pork chops and stuff with the mixture. Use toothpicks to keep them together
  6. In a dutch oven or pan that can go into the oven, saute the bacon and red onion until the bacon has browned a bit
  7. add in the sweet potato, rosemary, red pepper and apples stirring occasionally until browned
  8. add salt and pepper to taste, sprinkle red pepper flakes.
  9. place the pork chops on top of the potato and place in the oven for 45 minutes covered.
