JB’s Delicious Gingerbread

JB's Gingerbread
This is my grand mother's delicious gingerbread recipe. Enjoy it warm with a scoop of vanilla ice cream!

Ingredients
  • 1 cup of sugar
  • 1 cup of vegetable oil
  • 1 cup of dark molasses
  • 1 cup of boiling water
  • 2 eggs beaten
  • 1 tsp of ginger
  • ½ tsp nutmeg
  • ½ tsp allspice
  • ½ cinnamon
  • 2½ cups flour
  • ½ tsp salt
  • 2 tsp baking soda
  • raisins (optional)
Instructions
  1. Preheat oven to 350 degrees
  2. In a medium size mixing bowl combine the sugar, oil, molasses, eggs, ginger,nutmeg,allspice & cinnamon and mix together.
  3. add flour & salt to liquid mixture
  4. In a seperate mixing cup combine the boiling water and baking soda, stir until baking soda is dissolved and pour into mixture
  5. mix together well until the mixture is smooth
  6. Grease a metal loaf pan with crisco and pour mixture into the pan
Notes
add more ginger depending on how strong you want it to taste, no more than two tsp recommended
If you choose to add raisins to your gingerbread , flour them first in a seperate bowl and add at the end once the mixture is smooth
