BUDGET DINNER- SMOTHERED PORK CHOPS

Summer is coming to a close and I don’t know about you but I’ve had just about enough potato salad and bbq chicken. Let’s switch this party up a bit with a nice hot and delicious meal thats also affordable. This recipe can be made for around $40 dollars and feeds a family of four. Smothered pork chops can be served with rice, pasta, couscous, you name it. If you are focused on a low carb eating plan you can even eat it with just veggies it just as delicious!

BUDGET DINNER- SMOTHERED PORK CHOPS

Ingredients
  • 4 pork loin chops (1/2 inch thick)
  • 1 large carrot peeled and cubed
  • ½ large onion diced
  • 2 stalks celery sticks finely diced
  • 1½ cups chicken stock unsalted
  • ½ cup water
  • 3 tbsp flour (extra for dipping pork chops)
  • 1 tbsp olive oil
  • 1 tsp thyme
  • salt & pepper to taste
Instructions
  1. Lightly season pork chops with salt and pepper. Then lightly flour both sides of the pork chop.
  2. Heat olive oil in a heavy sauce pan with a top.
  3. Once oil is hot brown pork chops on each side for 3 mins.
  4. Remove pork chops from pan and set aside.
  5. Add vegetables and herbs to the hot pan and saute until soft.
  6. Add in flour and stir into vegetables and let them brown a minute.
  7. Season with salt and pepper to taste.
  8. Stir in chicken stock and water and reduce heat. Taste for flavor and add more salt and pepper if needed.
  9. Once it thickens return the pork chops to the pan & cover with gravy.
  10. Place the top on the pan and let pork chops simmer for 25-30 min stirring occasionally.
  11. Remove from pan and serve hot over rice, pasta or potato.
Notes
Do not use center cut pork chops, they will dry up if cooked this method.
