It’s a one pan dish, which means easy preparation and clean up, yet another plus to this recipe. This chicken recipe is layered with fresh garlic and spinach and also marinated artichokes and sun dried tomatoes.

The best part of this recipe is the fresh smoked mozzarella cheese and creamy gruyere cheese. We’ve paired this delicious dish with fresh linguine pasta but you can pair it with just about anything. It will go well with baked potato, zucchini noodles, rice or even couscous.

Budget Dinner - Spinach & Artichoke Chicken

Ingredients
  • 6 skinless boneless chicken thighs or breasts
  • ½ cup marinated artichokes
  • ½ cup marinated sun dried tomato
  • 1 small red onion thinly sliced
  • 2 garlic cloves, minced
  • 2 cups baby spinach leaves
  • ½ cup grated, gruyere cheese
  • 9 slices of thinly sliced smoked mozzarella
  • keep 2 tbsp of oil from the sun dried tomatoes
Instructions
  1. Pre-Heat over to 375 degrees
  2. Lightly season chicken with salt and pepper
  3. Place on the bottom of a casserole dish
  4. Layer with garlic, red onion, sun dried tomatoes, artichokes, spinach, smoked mozzarella and gruyere cheese
  5. Drizzle oil from sun dried tomatoes over the dish
  6. Baked in the oven for 20-25 minutes
  7. Remove from the oven and serve hot with your choice of starch

  1. I really enjoyed this dish. I typically do not like artichokes but the marinated ones were really good. It really was quick to prepare and delicious. The only thing I did differently was use regular mozzarella because I couldn’t find the smoked mozzarella at the supermarket I went to but it still came out delicious.
