Miss T’s Loaded Sweet Potato
This is one of my favorite ways to eat sweet potato! The fresh guacamole adds a sort of Mexican flair to this dish, on occasion I’ve double loaded my sweet potato so that is resembles nachos. This recipe also has its health benefits and it is perfect if you are looking for a meatless option.
Miss T's Loaded Sweet Potato
This baked sweet potato is wonderfully creamy and flavorful with a hint of spice.

Ingredients
- 2 large sweet potatoes
- ½ a fresh lime
- ½ tsp cilantro
- ¼ cup diced red onion
- ¼ cup diced fresh tomato
- 1-1/2 ripe Hass avocados (peeled and seeded)
- ¼ tsp red pepper flakes
- sea salt to taste
- ½ cup roasted fresh corn
- 1 cup of sour cream
Instructions
- Preheat oven to 375 degrees
- Wrap potatoes separately in foil paper and rest them directly onto the oven rack and bake for 45 minutes.
- In a small bowl mash the avocado with a fork.
- Add in the cilantro, tomato, red onion, red pepper flakes and squeeze fresh lime juice.
- Mix together well and add sea salt to taste (start with a pinch).
- Cut the sweet potato in half or open and layer with the fresh guacamole, roasted corn and sour cream.
Notes
If you want more of a kick add more red pepper flakes to the guacamole.
This was very easy to make and loved how the flavors blended together nicely. I think this might become a weekly meal at my house 👍🏽
