Budget Dinner – Creamy Spinach and Salmon
Who says you can’t have salmon on a budget?? This budget recipe is a little bit more than our usual budget dinners, however, for a family of four you can have this delicious salmon dish with your choice of rice or pasta and vegetables to make the complete meal. This meal comes in at just under $60, and you may even be able to do it for cheaper if you don’t mind using frozen salmon.

Ingredients
- 4, 6 oz pieces of salmon
- 3 cloves of garlic chopped
- ¼ cup of julienned sun-dried tomatoes in oil
- 2½ cups baby spinach leaves
- 1 shallot finely diced
- 1 tbsp of extra-virgin olive oil
- 1 tsp butter
- 1 tsp garlic butter
- ¼ cup vegetable stock
- 1 cup heavy cream
- ½ cup of grated parmesan cheese
Instructions
- In a large sauce pan heat the olive oil over medium high heat until the pan is nice and hot.
- Lightly season each piece of salmon on both sides.
- Place the salmon in the pan flesh side down for five minutes then turn it over for another five minutes. (do not cook it for too long)
- Set the salmon aside .
- In the same pan add the garlic butter and regular butter.
- Then add in the garlic and shallot and cook for about 3 minutes or until fragrant and soft.
- Then add in the sun-dried tomatoes and saute for about a minute.
- Add in the vegetable stock and using a spatular rub all the bits from the bottom of the pan as the stock simmers down.
- Reduce heat to low and add in the heavy cream. Allow it to thicken for about 5 minutes stirring occasionally.
- Taste and add in salt and pepper to taste if needed.
- When it has thickened add in spinach leaves and mix them into the sauce until they are wilted.
- Add in parmesan cheese and allow it to melt down into the sauce.
- Carefully add the salmon back into the pan and using a spoon cover each piece with the sauce.
- Sprinkle cheese over the top and cover and remove from the heat.
- Let stand for 3-5 mintes
- Serve hot with your choice of starch and vegetable.
Notes
Leaving the skin on the filets before cooking will ensure they don't fall apart when cooking.
