Budget Dinner – Easy Lasagna

If you like lasagna, you are going to love this recipe. It is super easy and taste delicious, plus you can make it to feed your family for less than $50! This lasagna is a complete meal on its own, but if you’ve got big eaters, you can add a green salad and some garlic bread to make sure all tummies are happy. If you are lucky enough to have any left after, it also goes great for lunch the next day. ENJOY!

Budget Dinner - Easy Lasagna
This lasagna dish is easy, delicious and guaranteed to make tummies happy!

Ingredients
  • 1 box of express lasagna
  • 2 lbs of fresh lean ground beef
  • 1 small can of peas and carrots
  • 1 tbsp olive oil
  • 2 packages of Philadelphia cream cheese
  • 2 package of shredded Italian five cheese mix
  • 2 cans of sloppy joe tomato sauce
  • 1 16oz bottle of tomato sauce
  • ½ medium onion diced
  • ¼ tsp oregano
  • ¼ tsp dried thyme
  • salt & pepper to taste
Instructions
  1. Preheat oven to 375 degrees
  2. In a large sauce pan saute onion in olive oil until transparent.
  3. Combine seasoning and ground beef and brown lightly over medium high heat than add in the sloppy joe mix until the meat is cooked through then mix in peas and carrots.
  4. Taste and season as needed.
  5. In a separate bowl add a tsp of sugar to the tomato sauce.
  6. In a lasagna dish or rectangular casserole dish cover the bottom with half of the tomato sauce mixture and then make one layer of lasagna to cover the bottom of the dish.
  7. Add a layer of meat sauce over the pasta strips (half of the meat mixture on one layer).
  8. Whip the cream cheese using a hand mixer to make it easier to spread.
  9. Now add a layer of whipped cream cheese over the meat.
  10. Add a layer of shredded 5 cheese mixture.
  11. Start the next layer of pasta and layer up the same way.
  12. The top of the lasagna should be layered with meat mixture, pour the balance of the tomato sauce over the top of the meat and then layer the top with cheese.
  13. Cover and bake for 45 min, remove cover and bake for another 12 minutes or until the top has browned but not crispy.
  14. Serve hot!
Notes
- If you cannot find whipped cream cheese buy the regular bars and whip it yourself with a hand mixer.
-This recipe can also be made with ground turkey.
- Add a little sugar to your tomato sauce so to break the acidity if needed.
