Roasted Green Beans
Green Beans are a popular holiday dish at our house. They can however get a bit boring at times. This recipe will add a little pizzazz to your holiday veggies! They are so easy to do and so delicious.
I am particularly partial to a nice crunchy bean. The balsamic vinegar and garlic add some really good flavor to the beans, that will intensify the longer they sit in the Olive oil mixture. The mushrooms will soak up all the flavors as they sit.
The key to that great crunch is all in the roasting method. When roasting vegetables we have to keep a good eye on them. Make sure to stir them and test them every five minutes to get them done just the way you like them.

Roasted Green Beans
Green beans beautifully flavored and roasted with mushrooms.

Ingredients
- 2 cups of green beans
- 1 cup of mushrooms cut in quarters
- ¼ cup Olive Oil
- 1 tsp minced garlic
- 2 tbsp of balsamic vinegar
- twist of lemon
- salt and pepper to taste
Instructions
- In a medium sized bowl whisk together the olive oil, garlic, balsamic vinegar, twist of lemon
- Add the green beans and mushrooms to the bowl and toss, making sure to coat all the vegetables
- Cover and set in the fridge for an hour
- Remove from the fridge let sit while oven heats to 400 degrees
- Pour into a shallow cooking pan
- Sprinkle with salt and pepper
- Roast for 15 min
