Cranberry Pound Cake
Admit it! Cake has got to be categorized as a holiday staple. There would be no holiday without cake. A good pound cake always does the trick. Since its the holidays cranberries are the perfect addition. Great flavor and good holiday color.
Over the holidays, I like to give out little baked goods as gifts. I bake the cutest little mini loafs and wrap them to share with my friends and extended family. Sort of like a seasons greetings , prelude to Christmas treat! Always appreciated and always enjoyed. Perfect for that cuddle in front of the fire place with a nice hot cup of tea.
Cranberry Pound Cake
This delicious pound cake is perfect for the holidays, its packed with lots of flavor and the sweet of the cranberries adds the perfect touch.

Ingredients
- 1 lb of Butter
- 1 lb of Sugar
- 1 lb of flour
- 1 dozen eggs separated
- ½ tsp vanilla
- 1 tsp lemon
- 1 tsp almond
- 1 tsp pineapple flavoring
Instructions
- Preheat oven to 350 degrees
- Cream butter & sugar
- Add beaten egg yolks
- Beat well
- Add flour
- Add beaten egg whites
- Mix well
- Add in one cup of craisins and mix well
- Pour into small loaf pans or one regular size loaf pan
- Bake for about 20 minutes (mini loafs) or until a knife comes out clean when testing for doneness
Notes
If using a regular sized loaf pan cooking time will be longer, about 45 min to cook thru completely.
