Stuffed Pork Chops, Sweet potato and Delicious Gala Apples

I love a good pork chop! Stuff a pork chop and add some sweet potato, bacon and fresh-baked apples and you got me hook, line and sinker. That’s right bacon! lol If a little bit of pork upsets you , you should probably stop reading right about now, but if you enjoy a good pork chop this recipe is a must try!

The are so many different ways to cook pork chops , I personally like to have them steamed in the oven or stewed down slowly in the crock pot. Occasionally I’ll do them on the grill as well. Today we are going to do them in the dutch oven.

I have a recipe I used for a sweet potato hash that includes bacon, red onions, red pepper flakes, and sweet peppers.One of the more popular flavors that compliments pork is apples.So I was thinking I would throw some apples in the mix and baked them in my dutch oven along with the pork chops.

The pork chops will be stuffed with spinach, minced garlic and goats cheese and onion. I love the taste of a good goats cheese. The flavor it adds to dishes is amazing. When stuffing the pork chops you will need to use some large toothpicks or skewers to keep the stuffing from falling out.

Ingredients
  • 2 cups cubed sweet potato (skin on)
  • 2 gala apples cubed (skin on)
  • 1 small red onion sliced
  • ½ of a red pepper sliced
  • 5 strips of bacon cut in half-inch pieces
  • 1 spring of rosemary
  • 4 thick cut bone-in pork chops
  • salt and pepper to taste
  • sprinkle of red pepper flakes (optional)
  • Stuffing
  • 1 cup baby spinach leaves
  • ½ cup of sliced mushrooms
  • ½ cup of diced onions
  • ½ tsp of minced garlic
  • ½ cup goats cheese
Instructions
  1. Preheat oven to 350 degrees
  2. First prepare the stuffing for the pork chop
  3. Lightly saute the onion, minced garlic , and mushrooms
  4. Combine the spinach leaves, goat cheese and sauteed vegetables
  5. Slice a pocket into the fat side of the pork chops and stuff with the mixture. Use toothpicks to keep them together
  6. In a dutch oven or pan that can go into the oven, saute the bacon and red onion until the bacon has browned a bit
  7. add in the sweet potato, rosemary, red pepper and apples stirring occasionally until browned
  8. add salt and pepper to taste, sprinkle red pepper flakes.
  9. place the pork chops on top of the potato and place in the oven for 45 minutes covered.
