Blueberry Pound Cake
When my nana first gave me this pound cake recipe, I was in my second or third year of university and I remember being really home sick. I always loved to cook so I used cooking to get over my home-sickness by cooking and baking foods that reminded me of home. Sounds strange right? Nevertheless, I lived in an apartment alone and would watch the cooking channel religiously. This used to inspire lots of experimenting with food. Some things worked out really well and some were a total disasters!
The day I decided to throw some blue berries into this pound cake was a really big deal, because I had never really eaten blue berries, it wasn’t something that I grew up eating or that me parents bought when they did their weekly shopping. I remember watching Paula Dean, making a cake with blue berries and I thought hmmmm I wonder if …. let’s try it. Well it was a hit and I have been addicted to all types of berries ever since. They are a regular on my shopping list.
This recipe is a basic pound cake recipe, traditionally used for Christmas cakes or just a simple cake to use for birthdays, Sunday dinner etc, with blue berries added to it. It’s moist, not too sweet but very flavorful because it has exacts of almond, vanilla, lemon, and pineapple flavoring.
One thing about this recipe is, it uses British measurements, that where very difficult for me at first. So what I did was, I made a measurement conversion sheet (I found out many of my nana’s recipes used these measurements), to make things easier.It’s included here as a FREE printable to keep for your records. One last thing I want to say about this recipe and baking period. I’ve heard a ton of people , some of my friends included , say ” I can cook , but I can’t bake”. ABSOLUTE NONSENSE!!! If you can read and follow a recipe you can bake, simple as that. Don’t be afraid to bake it’s really nothing to it.
Tip: One really popular reason why lots of people have issues when they bake, is that they just throw everything in the bowl together and mix it. That may be fine for stuff like pancakes, but when you bake there is usually a series of steps to follow and they are very simple. For example , when ever you are baking and you have a recipe that consist of butter, sugar, and eggs, it’s very common that you would first cream the butter and sugar and then add the eggs and mix those really well into the butter and sugar mixture and then continue to add the other ingredients. Again all you have to do it just follow the instructions. Happy Baking!!!
- 1 lb. butter
- 1 lb. sugar
- 1 lb. flour
- 1 dozen eggs separated
- ½ tsp. vanilla extract
- ½ tsp. lemon extract
- ½ tsp. almond extract
- ½ tsp. pineapple flavoring
- 1 cup fresh blue berries
- Cream butter & sugar together
- add beaten egg yolks
- beat well
- Add the almond, vanilla, lemon and pineapple flavoring
- add flour
- and beaten egg whites
- mix well
- fold in blue berries
- bake at 350 degrees until a toothpick comes out clean
