Miss T’s Johnny Bread
Everybody has that favorite meal or snack that your grandmother used to make when you were a child. I’m willing to bet that its still one of your go to meals or snacks when you are looking for that delicious comfort food! Today I am sharing with you one of my favorites, Johnny Bread.

I can’t say for sure if my grandmother created this recipe or not, but it was hand written in one of the old cook books she gave to me when I went off to University. I’ve made a few of my own modifications over the years based on my personal preferences and tastes.

If you have never had Johnny Bread, it tastes like a sweet bread and in my opinion most enjoyable when it is fresh and warm. Unlike other doughy recipes it doesn’t need to rise for long periods of time and is really simple to do. It’s usually served as a breakfast dish in my family (I’ve been known to eat the left over Johnny Bread from breakfast with a nice curry for dinner later that same night).
Toppings
Typically you can eat just about anything with Johnny Bread. Anything includes, cheese, jam, tuna fish salad, chopped egg salad, turkey, ham , avocado, bacon etc. Any combination of these usually works as well, but those are some of the things that I like to eat with my Johnny Bread.
To cook Johnny Bread, most times you would roll it out like a dough and cut into triangles or circles and fry it in a pan with oil over a medium heat turning occasionally until cooked through. Or … you can do it to lazy/fast way (the way I do it) and roll it out into a greased cookie sheet and bake it in the over on 375 degrees until it is cooked through and browned nicely and then when it’s done cut it into pieces.

- 4 cups flour
- 1 cup milk
- 1¼ cups sugar
- 3 teaspoons baking powder
- 3 eggs beaten
- 1 tsp salt
- 1 stick of butter
- Cream together butter and sugar
- Add eggs and mix well
- Add baking powder, salt and flour mix well
- Pour in milk and fold into the mixture
- The mixture should be consistent with dough
- Roll out like a dough
- At this point you can either cut it into pieces and bake in the oven(375 degrees)until cooked through and browned on top or fry in a sauce pan with oil over medium heat turning frequently until cooked through.
