WHY I CREATED THIS COOKBOOK

I used to really struggle with cooking weeknight dinners for my family.  Mainly because all of the recipes that I was good at and my family enjoyed, took loads of time to prepare. I would find myself stressing at the end of the work day and worrying the entire drive home about what I was going to be able to cook that was fast and easy. Some days it was so stressful that I would stop somewhere along the way and pick up a take out. That became a costly habit, both financially and health wise.

I later picked up the habit of frozen dinners and canned soups, but these too were unhealthy habits and could be very costly depending on the brands I would buy. Not to mention, canned foods are extremely high in sodium. Too much of this isn’t good for any of us.

This really started to bother me, because I wanted what all of us want, to feed our families good wholesome meals, that are made with fresh ingredients and are well-balanced. In addition, we want to spend as much quality time with our families as we can.

I figured, the less time I spend in the kitchen, the more time I would have to unwind, talk about my day and hear about everyone else’s day as well. On weekends, I began to experiment with different ingredients to come up with recipes that I can make that are not just quick and easy, but also delicious and at least moderately healthy.

Developing these recipes helped me to meal plan for the week and made grocery shopping on the weekends so much easier.

I know there are many hardworking women and men out there who face the same challenges as me, and this cookbook is dedicated to ALL OF YOU!
